Means are provided to adjust the speed of the turbulence inducing fans in a tunnel freezer in accor- dance with the product to be cooled and/or frozen. Significant power savings can be made with some products together with a reduction in the overall liquid nitrogen consumption. In one embodiment the tunnel freezer com- prises four sections each of which is maintained at a specific temperature by its own temperature sensor and its own supply of cryogenic fluid. Each section is provided with one or more turbulence inducing fans the speed of which is adjusted in accordance with the pro- duct to be cooled and/or frozen. The tunnel freezer may also be provided with one or more gas transfer fans.
