During the fine-milling of sugar, the fine material deposited on the surfaces is amorphous and hygroscopic. Excess water which is taken up is released during the subsequent recrystallisation and can cause the formation of clumps. Conventionally, intricate additional measures have been necessary in order to avoid the above. According to the invention, a nozzle (8) for injecting steam is provided in a mill (3), or in a pneumatic supply line (6), connected thereto. The recrystallisation time is reduced by means of the injecting of steam. A pneumatic mixing head (15) is arranged in the frustum-shaped lower section (16) of a collecting chamber (7). Blasts of air are injected into the collecting chamber (7) at short intervals by means of the mixing head (15). The fine-milled sugar collecting there is thus aerated, whilst the recrystallisation continues. The excess water released during the recrystallisation is thus driven off. The icing sugar can be removed in recrystallised form and can be stored and transported without further treatment.
Durant la pulvérisation de sucre, la matière fine se déposant sur les surfaces est amorphe et hygroscopique. L'excès d'eau emmagasiné est éliminé lors de la recristallisation ultérieure et permet d'éviter l'agglomération. A cet effet, des mesures supplémentaires coûteuses devaient jusqu'à présent être mises en oeuvre. Selon l'invention, une buse (8) sert à insuffler de la vapeur dans un broyeur (3) ou dans une conduite d'acheminement (6) pneumatique raccordée audit broyeur. L'introduction de vapeur permet de limiter le temps de recristallisation. Contre la partie inférieure tronconique (16) d'un récipient d'accumulation (7) qui est alimenté en matière fine, se trouve une tête mélangeuse pneumatique (15). Grâce à ladite tête mélangeuse (15), des jets d'air sont insufflés à intervalles courts dans le récipient d'accumulation (7). Cela permet de désagréger le sucre finement moulu qui s'est accumulé, alors que la recristallisation se déroule. L'eau en excès issue de la recristallisation est éliminée. Le sucre en poudre peut être extrait sous forme recristallisée et est apte à un traitement ultérieur et au transport.
