The present invention is directed to a method of changing a material property of an energy food product or intermediary of the energy food product prior to treatment by a unit Operation during manufacturing. The method comprises the steps of: providing the energy food product or the intermediary, wherein the energy food product or the intermediary has at least one material property that changes upon experiencing an effective temperature change during manufacturing; changing the temperature of the energy food product or the intermediary by an amount effective to cause at least one desired material property change; and, optionally, transporting the energy food product or the intermediary to the unit Operation.
Cette invention se rapporte à un procédé permettant de modifier la propriété matérielle d'un produit alimentaire énergétique ou d'un intermédiaire de ce produit alimentaire énergétique, avant son traitement par une opération unitaire lors de la fabrication. Ce procédé consiste : à produire le produit alimentaire énergétique ou l'intermédiaire, qui possède au moins une propriété matérielle se modifiant lorsqu'il est soumis à une variation de température effective pendant la fabrication; à faire varier la température du produit alimentaire énergétique ou de l'intermédiaire par une valeur propre à entraîner au moins une modification de propriété matérielle souhaitée; et, éventuellement, à transporter le produit alimentaire énergétique ou l'intermédiaire jusqu'à l'opération unitaire.
