The present invention relates to the use of a microorganism belonging to the group of lactic acid bacteria or a mutant or derivative thereof, characterized in that it is capable of specifically binding to a bacterium belonging to the group of mutans Streptococci, wherein the specific binding is (i) resistant to heat treatment; and/or (ii) resistant to protease treatment; and/or (iii) calcium-dependent; and/or (iv) formed within a pH range between 4.5 and 8.5; and/or (v) formed in the presence of saliva, for the preparation of an anticariogenic composition for the treatment or prevention of caries caused by mutans Streptococci other than Streptococcus mutans. Preferably, the specific binding can be assayed as follows: (a) growing said microorganism to stationary phase; (b) mixing said microorganism with a bacterium belonging to the group of mutans Streptococci which has been grown to stationary phase; (c) incubating the mixture obtained in step (b) under conditions allowing the formation of aggregates of said microorganism and a bacterium of the group of mutans Streptococci; and (d) detecting aggregates by the occurrence of a pellet. Another aspect of the present invention is a method of prophylaxis or treatment of caries caused by mutans Streptococci other than Streptococcus mutans, comprising administering a microorganism belonging to the group of lactic acid bacteria characterized in that said microorganism is capable of specifically binding to a bacterium belonging to the group of mutans Streptococci or a mutant, derivative, analog or fragment of said microorganism.
La présente invention concerne l'utilisation d'un microorganisme faisant partie du groupe des bactéries d'acide lactique ou un mutant ou un dérivé de celles-ci, caractérisé en ce qu'il est capable de se lier spécifiquement à une bactérie faisant partie du groupe des streptocoques mutants, la liaison spécifique étant (i) résistante à un traitement thermique ; et/ou (ii) résistante à un traitement par protéase ; et/ou (iii) calcium-dépendante ; et/ou (iv) formée dans une plage de pH entre 4,5 et 8,5 ; et/ou (v) formée en présence de salive, pour la préparation d'une composition anti-cariogène pour le traitement ou la prévention des caries provoquées par des streptocoques mutants autres que Streptococcus mutants. De préférence, la liaison spécifique peut être testée comme suit : (a) cultiver le microorganisme jusqu'à une phase stationnaire ; (b) mélanger ledit microorganisme avec une bactérie faisant partie du groupe de streptocoques mutants qui a été cultivé jusqu'à une phase stationnaire ; (c) incuber le mélange obtenu à l'étape (b) dans des conditions permettant la formation d'agrégats dudit microorganisme et une bactérie du groupe de streptocoques mutants ; et (d) détecter les agrégats par l'occurrence d'un pellet. Un autre aspect de la présente invention est un procédé de prophylaxie ou de traitement de caries provoquées par des streptocoques mutants autres que Streptococcus mutants, comprenant l'administration d'un microorganisme faisant partie du groupe des bactéries d'acide lactique, caractérisé en ce que ledit microorganisme est capable de se lier spécifiquement à une bactérie faisant partie du groupe de streptocoques mutants ou d'un mutant, dérivé, analogue ou fragment dudit microorganisme.
