A vacuum steam wand for sanitizing a carcass includes a housing having a handle (10) and a thermally conductive vacuum head (12) with steam passages (14) within that maintain the temperature of the vacuum head above a desired sanitizing temperature. The vacuum head (12) includes a wall (42) defining a vacuum region (44) that is surrounded at the interior and exterior perimeter by multiple closely spaced steam nozzles (50, 52) that continuously wash the wall, spray the carcass to loosen contaminants and maintain the temperature of the wall at or above the sanitizing temperature. A thermometer (26) for monitoring temperature is provided and portions of the tool are coated with a nonstick coating. The wall (42) has a lowered height portion (46) which improves the vacuum lifting action and allows the inner surface to act as a scraper to prevent contaminants from collecting on the outer wall surface.
L'invention se rapporte à un tube à vapeur sous vide servant à nettoyer une carcasse et comprenant un corps pourvu d'une poignée (10) et d'une tête (12) sous vide thermoconductrice comportant des passages (14) pour la vapeur qui maintiennent la température de la tête sous vide au-dessus d'une température de nettoyage désirée. La tête sous vide (12) comprend une paroi (42) formant une région sous vide (44) qui est entourée sur son périmètre intérieur et extérieur de plusieurs ajutages à vapeur (50, 52) légèrement espacés qui lavent en continu la paroi, pulvérisent la carcasse pour en décoller les contaminants et maintiennent la température de la paroi à une température égale ou supérieure à la température de nettoyage. Un thermomètre (26) permet de contrôler la température et des parties de l'accessoire sont recouvertes d'un revêtement anti-adhésif. La paroi (42) comporte une section (46) à hauteur réduite qui améliore l'action de levage à dépression et permet à la surface interne de servir de grattoir pour éviter que les contaminants s'amassent sur la surface externe de la paroi.
