Disclosed is a W1/O/W2-type double emulsion dressing which comprises a polyglycerin condensed ricinoleate having an degree of esterification ranging from 10 to 30% inclusive and an degree of condensation of ricinoleic acid ranging from 5 to 8 inclusive and has a viscosity ranging from 1,000 to 300,000 mPa~s inclusive. Also disclosed is a method for production of a W1/O/W2-type double emulsion dressing comprising the steps of mixing 90 to 10 parts by mass of an aqueous phase (W1) with 10 to 90 parts by mass of an oily phase (O) to prepare a W1/O-type emulsion and mixing 100 parts by mass of the W1/O-type emulsion with 25 to 150 parts by mass of an aqueous phase (W2) to prepare the desired W1/O/W2-type double emulsion dressing, wherein a polyglycerin condensed ricinoleate having an degree of esterification ranging from 10 to 30% inclusive and an degree of condensation of ricinoleic acid ranging from 5 to 8 inclusive is contained in an amount of 0.01 to 5% by mass based on the total amount of the dressing. The dressing is excellent in storage stability.
La présente invention concerne une composition d~émulsion double de type W1/O/W2 qui comprend un ricinoléate condensé de polyglycérine présentant un degré d~estérification compris entre 10 et 30 % inclus, un degré de condensation d~acide ricinoléique compris entre 5 et 8 inclus et une viscosité comprise entre 1000 et 300000 mPa·s inclus. La présente invention concerne également un procédé pour la production d~une composition d~émulsion double de type W1/O/W2 comprenant l~étape consistant à mélanger 90 à 10 parties en masse d~une phase aqueuse (W1) avec 10 à 90 parties en masse d~une phase huileuse (O) en vue de préparer une émulsion de type W1/O et l~étape consistant à mélanger 100 parties en masse de l~émulsion de type W1/O avec 25 à 150 parties en masse d~une phase aqueuse (W2) en vue de préparer la composition d~émulsion double de type W1/O/W2 souhaitée, un ricinoléate condensé de polyglycérine ayant un degré d~estérification compris entre 10 et 30 % inclus et un degré de condensation d~acide ricinoléique compris entre 5 et 8 inclus étant contenu dans une quantité de 0,01 à 5 % en masse par rapport à la quantité totale de la composition. La composition présente une excellente stabilité de stockage.
