The invention concerns water-continuous emulsions having a fat content of 1-60 wt.%, and wherein the aqueous phase consists of a gelling polysaccharide capable of forming a gel while the shear modulus of the aqueous phase must fulfil specific requirements and while the gelling polysaccharides are present as microgels with a mean equivalent diameter of less than 100 µm. The emulsion is spoonable, meaning that it fulfils specific requirements as to yield value, Bingham viscosity and failure to stress. The emulsions can be used in non-dairy creams, in dressings and mayonnaises.

L'invention porte sur des émulsions aqueuses continues renfermant une teneur en corps gras de 1 à 60 % en poids, avec une phase aqueuse constituée d'un polysaccharide gélifiant, pouvant former un gel dans les conditions suivantes : le module de compressibilité de la phase aqueuse doit satisfaire à certaines exigences spécifiques; les polysaccharides gélifiants doivent être présents sous forme de microgels avec un diamètre équivalent moyen inférieur à 100 microns. Les émulsions sont cuillérables, autrement dit, elles satisfont à des exigences spécifiques pour la limite d'écoulement, la viscosité de Bingham et la contrainte de rupture. Les émulsions peuvent être utilisées dans des crèmes non laitières, des sauces et des mayonnaises.
