A method for producing a water-dispersible powder containing one or more sterols is described. This method involves creation of micelles comprising sterol and surfactant in an aqueous medium, and coating of these micelles with a mixture of starch and modified starch in a drying step. The dried powder can conveniently be added to water-based edible or drinkable formulations, thereby enabling administration of the cholesterol-lowering sterol in conjunction with a fat-restricted diet.

Cette invention a trait à un procédé de production d'une poudre contenant un ou plusieurs stérols. Le procédé consiste à produire des micelles contenant un stérol et un tensioactif dans un milieu aqueux, puis à enrober ces micelles d'un mélange d'amidon et d'amidon modifié lors de la phase de séchage. On peut, sans inconvénient, ajouter cette poudre séchée à des formulations à base d'eau, à boire ou à consommer, ce qui permet d'administrer un stérol abaissant le taux de cholestérol, lequel stérol est associé à un régime pauvre en matières grasses.
