One aspect of the present invention relates to a readily water-dispersible particulate composition comprising by weight of dry matter at least 10% of xanthan gum and not more than 60% of starch, said composition being characterised in that the xanthan gum present in the composition can be dispersed completely within 2 minutes in distilled water of 25 0C at a concentration of 0.7% based on the dry weight of xanthan. The particulate xanthan gum compositions of the present invention exhibit unique viscosity enhancing properties that are dependent on the electrolyte levels of the aqueous environment in which they are applied. The favourable properties of the xanthan compositions according to the invention can be realised without resorting to chemical modification of the xanthan gum. The xanthan compositions according to the present invention can be applied advantageously in e.g. food products and oil drilling fluids.
Dans un mode de réalisation, la présente invention a trait à une composition particulaire facilement dispersable dans l'eau comportant en poids de matière sèche au moins 10 % de gomme xanthane et un maximum de 60 % d'amidon. Ladite composition se caractérise en ce que la gomme xanthane présente dans la composition peut être complètement dispersée en deux minutes dans l'eau distillée à 25,0C à une concentration de 0,7 % par rapport au poids anhydre de xanthane. Les compositions particulaires à base de gomme xanthane de la présente invention présentent des propriétés uniques d'amélioration de viscosité qui sont dépendantes des niveaux d'électrolyte de l'environnement aqueux dans lequel elles sont appliquées. Les propriétés favorables des compositions à base de xanthane de l'invention peuvent être réalisées sans recourir à la modification chimique de la gomme xanthane. Les compositions à base de gomme xanthane de la présente invention peuvent être appliquées avantageusement, par exemple dans des produits alimentaires et des fluides de forage de pétrole.
