The present invention provides a water-in-oil type emulsified fat and/or oil composition of which emulsification is stable in spite of containing a high content of water and which is excellent during storage in physical properties and feeling on eating. That is, the present invention provides a water-in-oil type emulsified oil and/or fat composition which is composed of (1) the oil phase comprising 35 to 95 % by weight, based on the total oils and fats, of a diglyceride(s) having its increasing melting point of lower than 20 °C and the balance of triglycerides having fatty acid parts comprising 13 to 60 % by weight of palmitic acid and 5 % by weight or less of fatty acids having 12 or less carbon atoms, polymorph of the triglycerides being stable in the form of .beta.' and (2) the aqueous phase based on water.

L'invention porte sur une composition de graisse et/ou d'huile émulsifiée du type eau dans huile dont l'émulsification est stable malgré sa forte teneur en eau et dont les propriétés physiques et le goût restent excellents pendant le stockage. Ladite composition comprend: (1) une phase grasse comportant (a) de 35 à 95 % de son poids d'huiles et de graisses de diglycéride(s) présentant un point de fusion accru de moins de 20 DEG C, et (b) le reliquat de triglycérides dont des acides gras à raison de 13 à 60 % de leur poids d'acide palmitique et 5 % ou moins de leur poids d'acides gras à 12 atomes de carbone ou moins, polymorphes de triglycérides stables sous la forme beta '; ainsi que (2) la phase aqueuse en eau.
