The invention relates to the preparation of phenolics derivatives by enzymatic condensation of phenolics selected among pyrocatechol or its derivatives with the glucose moiety of sucrose. The production of said phenolics derivatives is achieved with a glucosyltransferase (EC 2.4.1.5). These O-.alpha.-glucosides of selected phenolics are new, have a solubility in water higher than that of their parent polyphenol and have useful applications in cosmetic and pharmaceutical compositions, such as antioxidative, antiviral, antibacterial, immune-stimulating, antiallergic, antihypertensive, antiischemic, antiarrhytmic, antithrombotic, hypocholesterolemic, antilipoperoxidant, hepatoprotective, anti-inflammatory, anticarcinogenic antimutagenic, antineoplastic, anti-thrombotic, and vasodilatory formulations, or in any other field of application.
La présente invention concerne la synthèse de dérivés phénoliques par condensation enzymatique de composés phénoliques sélectionnés parmi le pyrocatéchol et ses dérivés avec la partie glucose du sucrose. La production desdits dérivés phénoliques est menée à l'aide d'une glucosyltransférase (EC 2.4.1.5). Ces O-.alpha.-glycosides formés à partir de composés phénoliques spécifiques sont nouveaux, présentent une solubilité dans l'eau supérieure à celle de leur polyphénol parent, et ont des applications utiles dans le domaine des compositions cosmétiques et pharmaceutiques, entre autres des formules antioxidantes, antivirales, antibactériennes, immunostimulantes, antiallergiques, antihypertensives, anti-ischémiques, anti-arrhytmiques, antithrombotiques, hypocholestérolémiques, antilipoperoxidantes, hépatoprotectrices, anti-inflammatoires, anti-cancérogènes, antimutagènes, antinéoplasiques, antithrombotiques et vasodilatatrices, ou dans tout autre domaine d'application.
