This invention relates to a storage stable buoyant waxy grain wherein the waxy grain is waxy triticale and waxy wheat. The starch in the waxy grain is gelatinized throughout and the cooked waxy grains of this invention can be stored for pro-longed times in air tight or conventional cereal containers having a liner without acquiring rancid odors or tastes even in the ab-sence of preservatives that inhibit the development of rancidity. Preferably, the waxy wholegrain is a waxy wheat having a pro-tein content of no more than 14 % by dry weight. The processes for preparing the waxy wholegrain food products of this invention are also described.
L'invention concerne un grain cireux ferme et stable au stockage, ce grain étant le triticale cireux et l'amidon cireux. L'amidon du grain cireux est complètement gélatinisé, et les grains cireux cuits peuvent être stockés pendant des périodes prolongées, dans des conteneurs de céréales hermétiques ou conventionnels dotés d'une garniture, sans prendre d'odeurs ou de goûts rances même en l'absence de conservateurs qui inhibent le développement du rancissement. Le blé cireux présente, de préférence, un contenu protéique inférieur ou égal à 14 % en poids sec.
