The invention relates to a whey salt product, which is not bitter in taste, and which is characterized by containing 19 to 27 % potassium, 0.5 to 2% calcium, 5 to 7% sodium, 0.1 to 1 % magnesium, 17 to 37 % chloride and 0.5 to 3 % phosphorus and further 10 to 20 % protein and 10 to 35 % lactose, to a process for its production and its use as a table salt substitute. According to the invention, the whey salt powder is prepared in such a way that whey or an ultrafiltration permeate with a dry matter content of 20 % by weight at the most, obtained from milk or whey, is filtered through membranes by using nanofiltration membranes, the permeate with a dry matter content of 0.1 to 1.0 % by weight obtained from nanofiltration is concentrated and finally dried to powder.

L'invention concerne un produit à base de sel de lactosérum qui n'a pas un goût amer et qui se caractérise par le fait qu'il contient 19 à 27 % de potassium, 0,5 à 2 % de calcium, 5 à 7 % de sodium, 0,1 à 1 % de magnésium, 17 à 37 % de chlorures et 0,5 à 3 % de phosphore, ainsi que 10 à 20 % de protéines et 10 à 35 % de lactose. L'invention concerne également un de ses procédés de production et son utilisation comme substitut au sel de table. Selon l'invention, pour préparer la poudre de sel de lactosérum, on filtre du lactosérum ou un perméat d'ultrafiltration dont la teneur en matière sèche est au maximum de 20 % en poids, obtenu à partir de lait ou de lactosérum, à travers des membranes, en utilisant des membranes de nanofiltration. Le perméat obtenu par nanofiltration, dont la teneur en matière sèche est de 0,1 à 1,0 % en poids, est concentré et finalement séché pour obtenir une poudre.
