The present invention relates to compositions of matter comprising a rice grain, which has been at least partially milled, and, on the surface of the rice grain, a coating comprising bran, a material which increases the fiber value of the composition, or a combination thereof. The present invention provides for compositions that may have the benefits of traditional white rice, i.e., soft mouth feel, short cook times, easy to digest, white appearance, long shelf-life, etc., with the benefits of brown rice, i.e., high nutritional value and enhanced flavor. Indeed, the nutritional value of the compositions of the present invention may be equal to or better than that of whole grain brown rice. The present invention further relates to methods for the preparation of a whole grain rice composition. In one embodiment the methods comprises at least partially milling rice grains, and coating on the surface of the rice grains, a coating comprising bran, a material which increases the fiber value of the composition, or a combination thereof.

Cette invention concerne des compositions de matière comprenant du riz qui a été au moins partiellement moulu et, à la surface du riz, un enrobage comprenant du son, un matériau qui augmente la valeur en fibre de la composition, ou une combinaison de ceux-ci. L'invention propose des compositions pouvant présenter les avantages du riz blanc traditionnel, c'est-à-dire une douceur au goût, des durées de cuisson réduites, une facilité de digestion, une couleur blanche, une longue durée de conservation, etc., et les avantages du riz brun, c'est-à-dire une haute valeur nutritive et un goût plus prononcé. En fait, la valeur nutritionnelle des compositions de l'invention peut être équivalente à celle du riz brun complet ou meilleure que celle-ci. L'invention concerne par ailleurs des procédés de préparation d'une composition de riz entier. Dans un mode de réalisation, les procédés comprennent au moins partiellement du riz moulu et l'enrobage du riz, un enrobage comprenant du son, un matériau qui augmente la teneur en fibres de la composition, ou une combinaison de ceux-ci.
