Processes for producing wholegrain food products are described. Wholegrains comprising 20 % to 100 % waxy grains are cooked in the presence of moisture so as to gelatinize the grains. The gelatinized grains are formed into a dough of suitable size and shape, dried to a water content from about 4 % to about 25 %, and thereafter expanded by heating. Also described are food products produced by these processes.

La présente invention concerne des procédés de production de produits alimentaires à base de grains de céréale complète comportant 20 % à 100 % de grains cireux. Ces grains de céréale complète sont cuits en présence d'humidité de façon à obtenir leur gélatinisation. On forme avec ces grains gélatinisés une pâte ayant la forme et la taille souhaitée, que l'on déshydrate jusqu'à obtenir une teneur en eau de 4 % environ à 25 % environ, puis que l'on dilate par chauffage. L'invention concerne également des produits alimentaires obtenus à l'aide de ces procédés.
