ABSTRACT IF THE DISCLOSURE This invention related to a method of making red wine, in which grape skins are removed from the juice and pulp before the latter are fermented in the usual way. Colour is extracted from the separated skins by treatment with citric acid mixed with either hydrochloric, sulphuric or phosphoric acid, and after partial neutralizing the colour extract is added to the fermenting juice before the fermentation is complete.
