The invention relates to a wort boiling method for use in beer brewing and a corresponding device. The aim of the invention is to provide an energy-saving wort boiling method which is easy to put into practice and to handle. For this purpose, the wort (W) to be boiled is supplied to a wort pan (2) in a batch- wise and discontinuous manner and every batch (C) of the wort (W) supplied to the wort pan (2) is boiled in one boiling phase. The boiling wort's steam (D) escaping during the boiling phase is supplied to a buoyancy column (10) linked on the steam end with the wort pan (2) and is rectified therein.
La présente invention concerne un procédé économique en énergie et simple en ce qui concerne la réalisation et la manipulation, qui sert à cuire du moût au cours d'un processus de brassage de bière, ainsi qu'un dispositif associé. Selon l'invention, le moût à cuire (W) alimente une chaudière de brassage (2) par lots et de façon discontinue, et chaque lot (C) de moût (W) qui alimente la chaudière de brassage (2), est cuit au cours d'une phase de cuisson, la vapeur de moût (D) qui se dégage au cours de la phase de cuisson, étant guidée vers une colonne montante (10) reliée côté vapeur à la chaudière de brassage (2), pour y être rectifiée.
