A cell having a certain function in a process, containing recombinant DNA encoding at least one enzyme, wherein said cell becomes polyfunctional for said process upon expression of the recombinant DNA encoding at least said enzyme. Use of such a polyfunctional cell and/or enzyme obtainable from such a cell in for example a food processing process such as the preparation of bakery products. A recombinant DNA material comprising DNA with a nucleotide sequence encoding at least a ripening form of a xylanase of fungal origin.
