Abstract of the Disclosure The invention provides emulsions, particularly mar- garine and low fat spreads of the water-in-oil type con- taining substantially non-lypolytic and non-proteolytic oxygen-consuming yeasts in a concentration of 103 to 107 cells per gram of emulsion, strains of Kluyveromyces lactis and Debaryomyces hansenii being particularly preferred. The invention is particularly applicable to margarines containing vegetable fats of relatively high linoleic and linolenic acid content.
