Yogurt, yogurt containing foods and beverages including yogurt drinks and frozen desserts including sorbets and ice cream can be fortified with calcium citrate malate without adversely affecting the taste. These products have a more bioavailable source of calcium. The calcium fortified yogurt product or frozen desert comprises an additional 3 % to 100 % RDA calcium per unit serving added as calcium citrate malate. The calcium citrate malate is added either directly to the product, or with a fruit, fruit juice or fruit puree, or to the sweetener component. Yogurt beverages are preferably made by forming a calcium citrate malate sweetener composition or fruit flavored beverage and then adding the yogurt to the concentrate to make the yogurt containing beverage.
La présente invention permet d'enrichir en malate-citrate de calcium du yogourt, et des aliments et boissons contenant du yogourt, y compris les yogourts à boire et les desserts glacés tels que les sorbets et les crèmes glacées, sans en altérer le goût. Les produits de la présente invention constituent une source de calcium plus facilement assimilable. Le yogourt ou dessert glacé enrichi en calcium comprend un apport supplémentaire de 3 à 100 % de RAR de calcium par portion, ajouté sous forme de malate-citrate de calcium. On ajoute le malate-citrate de calcium directement au produit, ou on le combine à un fruit, à un jus ou à une purée de fruit, ou bien on l'ajoute au produit sucrant. Pour les yogourts à boire, on forme de préférence une composition sucrante au malate-citrate de calcium ou une boisson aromatisée aux fruits et l'on mélange ensuite le yogourt au concentré afin d'obtenir la boisson contenant du yogourt.
