ABSTRACT OF THE DISCLOSURE: The preparation of octenenitrile organic compounds having the general formula: Image (I) wherein Y is a lower alkanoyloxy, n is 0 or 1 and R is - CH-CN when n is 0 or R is -CN2-CN when n is 1, is carried out by dehydrating 3,7-dimethyl-3-hydroxy-6-octenenitrile to form a compound of the formula (I) in which n is 0 and R = CH-CN, or reacting 3,7-dimethyl-3-hydroxy-6-octenenitrile with a loweracyl halide to form a compound of the formula (I) in which n is 1, R is -CH2-CN and Y is a lower alkanoyloxy. The compounds obtained are suitable for use in the perfume and cosmetic industry.
