Wood ABSTRACT OF THE DISCLOSURE This invention relates to the provision of compositions for curing meats comprising dinitrosyl ferrohemochrome and at least one com- pound selected from among suitable antioxidants, sequestering agents and antimicrobial agents. Such compositions bestow similar colour, flavour, and microbiological stability to that associated with nitrite-treated meats.
