ABSTRACT OF THE DISCLOSURE An apparatus is provided herein for cutting fish heads into at least two parts. The apparatus includes guide means including an elongated head supporting rail. Means are provided for consecutively moving the fish heads, which have been threaded onto the head supporting rail, along the rail. Gill separating means are mounted on the head- supporting rails for engaging with the gills of the fish heads being passed along the supporting rail, so as to separate the gills from the fish heads at least at one end of the gills. Cutting means extend into the path of movement of the fish heads so as longitudinally to cut the respective fish heads passing the cutting means, whereby more valuable fish head parts may be separated from less valuable fish head parts. By this apparatus, then, the separation of the various parts of the fish head is achieved without manual cutting, so that utilization of fish heads for human consumption is now economic.
