PRECIS DE LA DIVULGATION: L'invention concerne un procédé pour faciliter la formation de sphérules lipidiques en dispersion dans un milieu aqueux D, et pour améliorer simultanément la stabilité et le taux d'encapsulation desdites sphérules lipidiques, celles-ci étant constituées de feuillets lipidiques sensiblement con- centriques encapsulant une phase aqueuse E, le(s) lipide(s) constitutif(s) des feuillets étant des amphiphiles ioniques ou non-ioniques, caractérisé par le fait qu'avant la formation desdites sphérules, on ajoute au(x) lipides(s) destiné(s) à constituer les feuillets des sphérules, au moins un cholestérol- sulfate de cation ammonium, alcalin ou alcalino-terreux, à raison de 1 à 50% en poids par rapport au poids total de la phase lipidique. L'invention concerne également une disper- sion aqueuse de sphérules lipidiques obtenue par ce procédé. Cette dispersion est utilisable dans le domaine cosmétique, pharmaceutique et alimentaire.
