ABSTRACT OF THE DISCLOSURE The invention relates to an extreme thermophilic enzyme CALDOLYSIN which is derived from an extremely thermophilic bacterium THERMUS AQUATICUS (Variety T-351). The enzyme CALDOLYSIN exhibits proteolytic activity, particularly at temperatures of 65°C to 85°C. It is stable at temperatures up to 75°C at a pH range of 4 to 12.
