3318 PROCESS FOR MAKINC STARCH HYDROLYZATES AND HIGH FRUCTOSE SYRUPS ABSTRACT OF THE DISCLOSURE An improved process is provided for conversion of crude starch-containing materials such as broken-polished rice and corn grits to starch hydrolyzates and high fructose syrups. The process employs short steeping and milling steps before enzymatic liquefaction and saccharification of the starch. The process causes a minimum solubilization of protein giving readily purified products. -24-
