Abstract The present invention provides a process for obtaining fructose by the enzymatic isomerization of glucose which comprises treating a glucose solution of a concentration of from about 20% to about 70% by weight, with a glucose-isomerase enzyme originating from Streptomyces griseoflavus NCIB 11542, at a temperature of from about 25°C to 80°C, and recovering the resultant fructose.
