ABSTRACT The invention relates to the solvent extraction of smoke colorant from natural liquid smoke. In accordance with the invention, the known acidic liquid smokes which are formed by contacting burning wood smoke with water are neutralized co separate tarry materials and form neutral storage stable liquid colorants which are capable of passing through regenerated cellulose sausage casings during cooking to color the meat and further do not cause deterioration of the casing during storage.
