ABSTRACT OF THE DISCLOSURE Improvements in the production of vinegar by the aerobic bacterial oxidation of ethanol are obtained by adding quanti- ties of gas to the fermentation mixture prior to micro or ultrafiltration thereof whereby more of the liquid of the mash passes through the filter membrane than if the mixture were subjected to substantially the same membrane filtration without having been admixed with gas. In this filtration, the retained concentrate of the vinegar bacteria and the remaining alcohol and acetic acid is returned to the fermen- tation vessel.
