ABSTRACT In the manufacture of N-formylaspartic anhydride, which is useful for preparing .alpha.-L-aspartyl-L-phenylalanine methyl ester sweetening agent, formic acid and acetic anhydride are reacted with aspartic acid especially L-form, in the presence of a metal compound, especially an oxide, hydroxide or salt: high yields are produced even when the formic acid is contaminated with acetic acid or acetic acid and organic solvent, and when the L-aspartic acid was recovered from the manufacture of .alpha.-L,aspartyl-L-phenylalanine methyl ester.
