An imitation cheese composition containing moisture, preferably in an amount that is as least 60 % by weight, a hydrocolloid, a cheese-derived component in an amount less than about 15 % by weight of the composition, cheese flavoring that is natural or artificial and an acidulents in an amount that causes a pH of the composition to be not greater than 4.6. The composition is sufficiently firm such that it can be at least one of sliced, cut, shredded or grated. Preferably, no more than 1 % protein is present, and/or the acidulent is in a total titrateable amount of less than 1.5 % by weight of the composition, resulting in an imitation cheese having a flavor, texture and consistency that was only previously attainable in a pasturized process cheese product.

L'invention concerne une composition de fromage d'imitation contenant de l'humidité, de préférence dans une quantité d'au moins 60 % en poids, un hydrocolloïde, une composante dérivée du fromage dans une quantité inférieure à 15 % en poids de la composition, un aromatisant de fromage naturel ou artificiel, et un acidulant dans une quantité telle que le pH de la composition ne soit pas supérieur à 4,6. Cette composition est suffisamment ferme pour pouvoir être au moins soit tranchée, soit coupée, soit hachée, soit râpée. De préférence, la composition ne contient pas plus d'1 % de protéine, et/ou l'acidulant dans une quantité titrable totale représente moins de 1,5 % en poids de la composition, ce qui a pour résultat l'obtention d'un fromage d'imitation possédant un goût, une texture et une consistance qui pouvaient antérieurement être obtenus uniquement dans un produit de fromage fondu pasteurisé.
