ABSTRACT LONG ACTIVE FOOD GRADE OXYGEN SCAVENGER THAT CAN WITHSTAND PASTEURIZATION A process is disclosed for immobilising a dried microorganism in solid material which comprises forming a suspension by bringing together, in a substantially anhydrous organic solvent, the dried viable microorganism and solid material, which dissolves in the organic solvent, coating a surface with the suspension, and removing the solvent. One application of the process in the deoxygenation of containers of food and drink that have to be pasteurised, wherein dried yeast is immobilised on the inner surface, stopper or closure of a container such that it retains, during pasteurisation, its oxygen consuming capacity. Another application of the invention is the use in the food industry of foils, wherein yeast is immobilised.
