Essentially pure acyltransferase is provided which is functional to catalyze reaction to form sugar esters. Also provided is isolated gene encoding acyltransferase. Additionally provided is a method for forming palmityl esters of glucose comprising reacting 1-O-palmitoyl-.beta.-D-glucose with itself, with glucose or with palmityl partial ester of glucose in the presence of a catalytically effective amount of acyltransferase.
Une acyltransférase essentiellement pure et dotée d'une fonctionnalité lui permettant de catalyser une réaction pour former des esters de sucre est décrite. Un gène isolé codant l'acyltransférase est également décrit, ainsi qu'un procédé de formation d'esters palmityle de glucose, consistant à faire réagir du 1-O-palmitoyl-.beta.-D-glucose avec lui-même, avec du glucose ou avec un ester partiel palmityle de glucose en présence d'une quantité catalytique efficace d'acyltranférase.
