L'invention a pour objet un procédé de transformation de matières amylacées comprenant une étape de fluidification chimique et une étape de stabilisation, simultanée ou non, ces deux étapes étant menées en phase sèche et par mise en oeuvre d'un acide organique polycarboxylique. L'acide peut notamment être choisi parmi l'acide citrique, l'acide adipiques, l'acide azélaique et leurs mélanges. Ce procédé est avantageusement mené à une température comprise entre 90°C et 170°C, à un pH inférieur à 4 et pendant une durée totale comprise entre 3 minutes et 8 heures. La matière amylacée soumise à fluidification et stabilisation peut notamment être cationique.
