Fractionation of high stearic soybean oils and their use for the production of edible oils and fat products suitable for confectionary and high stability applications is disclosed. High stearic soybean oils which do not contain traps fatty acid isomers, are used to produce fats useful for confectionary applications. In addition, high stearic, high oleic soybean oils having a decreased polyunsaturated fatty acid content are used to produce two products: fats with utility in confectionary applications and liquid, high stability oils.
L'invention concerne le fractionnement d'huiles de soja à teneur élevée en acide stéarique, ainsi que leur utilisation pour produire des huiles alimentaires et des corps gras convenant pour des applications de confiserie et des applications présentant une grande stabilité. Les huiles de soja ayant une teneur élevée en acide stéarique, mais ne contenant pas d'isomères trans d'acides gras, sont utilisées pour produire des matières grasses utiles dans des applications de confiserie. Les huiles de soja ayant une teneur élevée en acide stéarique et en acide oléique, mais une faible teneur en acides gras polyinsaturés, sont utilisées pour préparer deux produits: des matières grasses ayant une utilité dans des applications de confiserie et des huiles liquides présentant une grande stabilité.
