A method of manufacture of a crumb coated food product comprising the steps of: forming an aqueous mixture comprising: a flour mixture comprising one or more flours, sodium bicarbonate, optional additives selected from processing aids, salts, colourants and, water; adding the mixture into an extruder; adding an aqueous gelling agent to the extruder; extruding the resultant mixture at a temperature greater than 100°C to form an extrudate; allowing the extrudate to expand to form a porous product; drying the product, and milling the dried product to form a crumb.
Linvention concerne un procédé de fabrication dun produit alimentaire enrobé de chapelure qui comprend les étapes consistant à : former un mélange aqueux qui comprend un mélange de farine comportant une ou plusieurs farines, du bicarbonate de soude, des additifs éventuels choisis parmi des adjuvants de fabrication, des sels, des colorants et de leau; ajouter le mélange à une extrudeuse; ajouter un agent gélifiant aqueux à lextrudeuse; extruder le mélange résultant à une température supérieure à 1000 °C pour former un extrudat; laisser lextrudat se dilater pour former un produit poreux; sécher le produit et broyer le produit sec pour former une chapelure.
