A microorganism characterized by producing a lipid constituted by unsaturated fatty acids and secreting outside the cells the thus produced lipid in the form of lipid balls having the lipid encapsulated therein; a method for screening this microorganism; a process for efficiently producing the lipid containing the unsaturated fatty acids by using this microorganism; lipid balls having the lipid containing the unsaturated fatty acids encapsulated therein; and foods, cosmetics and animal feeds containing these lipid balls. Artificially treated microorganisms or microorganisms collected from nature are grown in a solid medium and a strain forming lipid balls around its colonies is selected, and/or grown in a transparent liquid medium and a strain causing cloudiness in the culture medium is selected. The thus obtained microorganism is cultured and the lipid balls having the secreted lipid are separated from the culture medium followed by the separation and purification of the lipid.
L'invention concerne un micro-organisme caractérisé en ce qu'il produit un lipide constitué par des acides gras non saturés et sécrète le lipide ainsi produit hors des cellules sous la forme de capsules contenant ce lipide. L'invention concerne également une méthode de criblage de ce micro-organisme, un procédé destiné à produire efficacement ce lipide comprenant des acides gras non saturés au moyen de ce micro-organisme, des capsules contenant ledit lipide, et des produits alimentaires et cosmétiques ainsi que des aliments pour animaux contenant ces capsules de lipide. Des micro-organismes traités artificiellement ou des micro-organismes recueillis dans la nature sont développés dans un milieu solide, une souche formant des capsules de lipide autour de ses colonies étant sélectionnée, et/ou développés dans un milieu liquide transparent, une souche provoquant une turbidité dans ce milieu de culture étant sélectionnée. On cultive alors le micro-organisme ainsi obtenu, puis on sépare les capsules contenant le lipide sécrété de leur milieu de culture avant de procéder à la séparation et à la purification de ce lipide.
