Disclosed is the DNA sequence of an enzyme present in Mucor rouxii which catalyzes the conversion of chitin to chitosan (i.e. having chitin deacetylase activity). Said DNA sequcnce may encode a rhizobial NodB protein, which shows some homology with the chitin deacetylase of the invention.
