A method of efficiently synthesizing an .alpha.-ketol unsaturated fatty acid having a double bond at the .beta.-position of the ketone moiety. The method is characterized by reacting a mono-substituted acetylene (2) with an epoxy compound (3) to synthesize a compound (4) and synthesizing an .alpha.-ketol unsaturated fatty acid (1) from the compound (4), as shown in the reaction formula (1). Reaction formula (1) (2) (3) (4) (1) (R1 is C1-18 alkyl or a C2- 18 aliphatic hydrocarbon group having one to five double or triple bonds; R2 is a hydroxyl-protecting group; R3 is a carboxyl-protecting group; R is the same as R1, provided that when R1 contains one or more triple bonds, then R is an aliphatic hydrocarbon group in which the triple bonds have been converted to double bonds; and A is C1-18 alkylene.)
L'invention concerne un procédé de synthèse efficace d'un acide gras insaturé .alpha.-cétol possédant une liaison double au niveau de la position de la fraction cétone. Ce procédé est caractérisé par la mise en réaction d'un acétylène mono-substitué (2) avec un composé époxyde (3) afin de faire la synthèse d'un composé (4) et par la synthèse d'un acide gras insaturé .alpha.-cétol (1) à partir du composé (4), comme le représente la formule de réaction (1) : (1) (2) (3) (4) (R?1¿ représentant un alkyle en C¿1-18? ou un groupe hydrocarbure aliphatique en C¿2-18? possédant une à cinq liaisons doubles ou triples, R?2¿ représentant un groupe protecteur hydroxyle, R?3 ¿représentant un groupe protecteur carboxyle, R étant semblable à R?1¿, à condition que lorsque R?1¿ contient une ou plusieurs liaisons triples, R représente un groupe hydrocarbure aliphatique dans lequel les liaisons triples ont été converties en liaisons doubles, et A représentant un alkylène en C¿1-18?.
