The invention concerns a composition comprising at least heteropolysaccharide such as pectin and a compound selected from the group consisting in carotenoids, in particular lycopene, and glucosinolate and/or sulphoraphane and mixtures thereof. The compositions are useful in medicine, dietetics and cosmetics, in particular for their curative and preventive properties relative to heavy metals and their anti-oxidant, anti-radical activity and their activity in stimulating cell turnover.
