A subirrigation system is provided for growing plants. The subirrigation system includes: (a) a level bench with waterproof surface; (b) a reservoir for holding a supply of water/nutrient solution below the bench; (c) a mechanism for maintaining a substantially constant level of water/nutrient solution in the reservoir; (d) capillary matting material layered over the waterproof surface of the bench; and (e) at least one container of plant growing medium with plant or seed positioned on the bench. Utilizing this subirrigation system methods have also been developed for maintaining a substantially constant water/air ratio in containers filled with plant growing medium and for determining a ratio of water/air to be maintained to optimize plant growth conditions.
