The invention provides an enzyme (F3GAT) which can transfer glucuronic acid to position-3 in a flavonoid, particularly a flavonol; a polynucleotide encoding the enzyme; a vector comprising the polynucleotide; a transformant produced using the vector; and so on. The polynucleotide in accordance with the invention comprises a polynucleotide comprising the nucleotide sequence represented by SEQ ID NO:3 or a polynucleotide encoding a protein comprising the amino acid sequence represented by SEQ ID NO:4.
