L'invention concerne l'utilisation d'une plante que l'on a modifiée afin de la rendre défectueuse pour l'activité de l'amidon synthétase soluble IV (SSIV) et d'obtenir des granules d'amidon présentant une taille accrue pour une teneur analogue en amylose d'amidon, ceci par comparaison avec la même plante non rendue défectueuse par rapport à l'amidon synthétase soluble IV (SSIV).
