A process for producing enzyme structures includes providing an emulsion of droplets of a first liquid phase dispersed in a second liquid phase. The one liquid phase is a hydrophilic phase, while the other liquid phase is a hydrophobic phase which is immiscible with the hydrophilic phase. Enzyme molecules are located at or within interfacial boundaries of the droplets and the second liquid phase. The enzyme molecules of the respective droplets are cross-linked so that individual enzyme structures, which are stable and in which the enzymes are immobilized with a majority of active sites of the enzymes being orientated either internally or externally, are formed from individual droplets.

La présente invention se rapporte à un procédé de production de structures enzymatiques consistant à se doter d'une émulsion de gouttelettes d'une première phase liquide dispersée dans une seconde phase liquide. Ladite première phase liquide est une phase hydrophile tandis que la seconde phase liquide est une phase hydrophobe qui n'est pas miscible avec la phase hydrophile. Des molécules d'enzymes sont situées au niveau ou à l'intérieur des limites interfaciales des gouttelettes et de la seconde phase liquide. Ces molécules d'enzymes de gouttelettes respectives sont réticulées de sorte que des structures enzymatiques individuelles, qui sont stables et dans lesquelles les enzymes sont immobilisées de sorte qu'une majorité de sites actifs des enzymes soient orientés soit vers l'intérieur soit vers l'extérieur, sont formées à partir des gouttelettes individuelles.
