A lightwave oven (10) cooking method and apparatus using pulsed power to a plurality of high power lamps (18a-18e, 16a-16e) provides visible and near-visible wavelength radiant energy wherein power is applied to the lamps (18a-18e, 16a-16e) for a time period without vaporizing an suface water on the food, then reducing irradiation to complete the cooking cycle avoiding significant surface browning which inhibits deep penetration in the food in the near-visible and visible ranges. Reduction in power is achieved by reducing the duty cycle in steps or continuously.

Procédé et appareil de cuisson à l'aide d'un four à ondes lumineuses (10), alimentant en énergie pulsée plusieurs lampes de haute puissance (18a-18e, 16a, 16e), et produisant une énergie radiante à ondes lumineuses dans le visible et le visible proche, la puissance d'alimentation étant appliquée aux lampes (18a-18e, 16a-16e) pendant une certaine durée sans vaporisation de toute l'eau de la surface des aliments, puis par réduction de l'irradiation afin d'achever le cycle de cuisson tout en évitant un brunissage trop important en surface, ce qui empêcherait une pénétration en profondeur dans les aliments d'une énergie radiante dans les plages du visible et du visible proche. La réduction de la puissance d'alimentation s~effectue en réduisant le cycle de travail par étapes ou en continu.
