Three novel polypeptides possessing (endo) .beta.-1,4-glucanase activity (EC 3.2.1.4) are disclosed which can degrade cellulose in plant extracts and plant materials. They are thus cellulases and can cleave .beta.-D-glucan polymers at internal (1-3, 1-4 or 1- 6) bonds between adjacent glucose units. The amino acid sequence and encoding DNA sequence is given of all 3 glucanases (CEA, CEB and CEC) which were obtained from the fungal strain Talaromyces emersonii. The glucanases can be used to treat cellulose in the preparation of edible foodstuffs and animal feed.
