The present invention provides an in vitro method for determining the glycemic in-dex values for various food products. The present invention provides an accurate and inexpensive in vitro method for determining the glycemic index of a wide variety of both food ingredients and finished food products. The method, involves inter alia the measurement of the proteon content, the fat con-tent, the amount of glucose and the amounts of at least two sugars or sugar alcohols selected from the group consisting of fructose, galactose, lactose, su-crose and maltitol in a digestive sample of the food product.
La présente invention concerne un procédé in vitro de détermination des valeurs de l'indice glycémique de divers produits alimentaires. La présente invention concerne un procédé in vitro précis et peu coûteux de détermination de l'indice glycémique d'une large variété d'à la fois des ingrédients alimentaires et des produits alimentaires finis. Le procédé comprend, entre autres, la mesure de la teneur en protéines, la teneur en matière grasse, la quantité de glucose et les quantités d'au moins deux sucres ou alcools glucidiques choisis dans le groupe comprenant le fructose, le galactose, le lactose, le sucrose et le maltitol dans un échantillon provenant de la digestion du produit alimentaire.
