The deposition of calcium salts, including calcium carbonate and calcium oxalate and the formation of foam, during the evaporation of sugar streams can be prevented or restricted by adding 0.1 - 200 ppm of a carboxyalkylfructan that contains 0.5 - 3 carboxyl groups per monosaccharide unit, 0.4 - 2.5 of which carboxyl groups are in the form of carboxyalkyl groups, to the sugar streams. The carboxyalkyl groups are, in particular, carboxymethyl groups. The other carboxyl groups can be carboxyl groups obtained by oxidation. The carboxymethylfructan gives comparable results to polyacrylates, which are less desirable from the standpoint of health and the environment.
Le dépôt de sels de calcium (y compris le carbonate de calcium et l'oxalate de calcium) et la formation de mousse, pendant l'évaporation des coulées de sucre, peut être empêché ou limité par addition dans les coulées de sucre de 0,1 à 200 mg/l d'un carboxylalkylfructosane contenant entre 0,5 et 3 groupes carboxyles par unité de monosaccharide, dont 0,4 à 2,5 desdits groupes carboxyles se présentent sous la forme de groupes carboxylalkyles. Les groupes carboxyles sont, en particulier, des groupes carboxyméthyles. Les autres groupes carboxyles peuvent être des groupes obtenus par oxydation. Le carboxylalkylfructosane donne des résultats comparables à ceux des polyacrylates, ces derniers étant cependant moins désirables du point de vue de la santé et de l'environnement.
