Strains of rumen bacteria are provided which have been genetically altered to express a protein rich in amino acids which are ordinarily deficient in lactating ruminants. Certain of the modified strains also produce bacteriocin, either naturally or due to genetic modification, which has the effect of improving rumen function, facilitating the establishment of the strain in the rumen and altering the content of unsaturated fat and total fat in milk. Introduction of these strains into the rumen of ruminant animals can result in the production of milk with a higher protein content, a higher proportion of unsaturated fat and a lower total fat content.
