Briquettes capable of sustained emission of aromatic volatiles during cooking of food over a heated bed of briquettes comprise a banded combustible or non-combustible matrix containing within the matrix at least one pellet of combustible aromatic material. The briquettes are preferably conventional charcoal briquettes containing a plurality of pellets of compressed bonded wood. The wood is preferably of flavoring wood such as hickory. The invention also encompasses a method of imparting flavor to food comprising cooking food over a heated bed of the briquettes of the invention.
L'invention concerne des briquettes dégageant de manière prolongée des agents aromatiques volatils pendant la cuisson d'aliments sur un lit chauffé de briquettes. Lesdites briquettes se composent d'une matrice agglomérée combustible ou non contenant au moins un granule de matière aromatique combustible. Ces briquettes sont, de préférence, à base de charbon et contiennent une pluralité de granules de bois aggloméré. Le bois utilisé est, de préférence un bois odorant tel que l'hickory. L'invention porte également sur un procédé permettant de parfumer des aliments, entre autres par cuisson de ceux-ci au-dessus d'un lit chauffé de briquettes selon l'invention.
